VINIFICATION:
Soft destemming with oscillating crumbler, delicate pressing and low pre-fermentation maceration at low temperature for 48 h. Maceration and alcoholic fermentation at controlled temperature (max 25°C) for 3 weeks in stainless steel vats and cold racking.
MATURING:
Malolactic fermentation and elevage on fine lees for 12 months in new French oak barrels of different toasting, followed by 12 months of aging in bottle.
COLOUR:
Intense ruby color with slight garnet red nuances.
AROMA:
Fruity and spicy notes are indelibly blended with balsamic smells and light toasting.
FLAVOUR:
Intense, warm, elegant. The long persistent finish envelops and blends with the complexity of aromas.
